This is one mouth watering spicy chicken recipe, not surprising really given the high fat content. Given that, this is a ‘once a week treat’ recipe but if you’re looking to shed a few pounds then this is probably one to avoid.
You can always use recipes like this one as your well earned treat after a few weeks of sustained fat loss.
If the fat content is too high for you then try it without the cream, or least go for low fat cream. You could also try dropping the butter (or substituting for a low fat butter) but note that this will have a very palatable effect.
Ingredients ( Hash)
- 2 Tbsp butter
- 1 med onion, chopped
- 1 red pepper, chopped
- 8 oz mushrooms, sliced
- 3-4 chicken breasts (450-500g), diced
- 3 Tbsp butter
- 1 cup cream
- 1 cup chicken broth
- Salt, pepper, Old Bay seasoning
- Thickener (guar gum or not Starch)
Mix all sauce ingredients except thickener and heat in pot.
Mix thickener with little water and stir in. Cook til thickened.
Sauce onion and pepper in butter.
Add mushrooms and salt, pepper and parsley and saute til done.
Mix in chicken and sauce, and serve.
