This is one of my favorite recipes as a treras given the giht carbs and fat. Not only is it tasty but is also one of those flexible recipes, where substitutions and variations can be made to suit your individual preferences.
You can substitute lean beef for the chicken, or go with fish.
The choice of vegetables to use is endless, and depending on availability of ingredients, you can come up with endless variations to this tasty recipe. Chicken kebabs make a great snack, or as side dish to other meals
- 6 boneless skinless chicken breasts
- 4 raw red peppers, cut into large pieces
- 3 cups broccoli florets
- 6 cups whole raw mushrooms
- 2 tbsp. apple cider vinegar
- 4 large tomatoes, cut into piece
- 5 tbsp. olive oil
- 1 tbsp. ground basil
- 2 cups chicken broth
- 1 tbsp. ground oregano
- 2 finely chopped cloves of garlic
Combine oil, chicken broth, vinegar, basil, oregano, and garlic in a baking dish to create a marinade.
Make eight skewer kebabs; on each skewer place chicken, pepper, broccoli, mushrooms, and tomatoes.
Place skewers in marinade and brush to cover.
Tightly seal with foil and bake in preheated 350 degree oven for 20 minutes.
Remove foil and continue baking for 15 more minutes.
